rapio carnaroli rice

This superfine short grain rice is from the same family as Arborio Rice, however, among chefs, it is considered superior to Arborio for making risotto. It has a short, plump grain that is slightly larger than the Arborio grain and it retains liquid and holds its shape better than Arborio rice. When cooked it has a creamy texture with a firm inner germ.
