Boulettes Larder was opened in 2004 by chef Amaryll Schwertner and Lori Regis, with the goal of creating beautifully elaborated dishes using the very best seasonal and organic ingredients available in the Bay Area, in combination with the unusual and exotic spices that Chef Schwertner has sourced throughout her 30 years as a professional chef.
Boulettes Larder is a chef’s kitchen that features a communal table for breakfast and lunch, a larder and an intimate space for evening parties. Our larder is envisioned as a mise en place, literally “the preparation and assembly of ingredients needed for a particular dish” for the home chef. At our larder you will find seasoned meats and fish, peeled roasted and steam vegetables, moistened grains, homemade stocks, sauces and condiments, a selection of organic seasonal ingredients ready to combine to make a wholesome hearty organic meal.
Chef Schwertner works with many local farms, which supply lovingly cultivated, unusual heirloom products that arrive still warm from sun. It is from this bounty that Chef Schwertner takes her inspiration. Starting each day as if with a blank canvas, she identifies the beauty and succulence in each day’s delivery and crafts it in to the rich layered flavors that delight visitors to Boulettes Larder
Her menu includes dishes layered with complex and original flavors from many regions including: Eastern Europe, North African, Turkey, Greece and Japan.
Chef Schwertner has dedicated much of her life to researching the spices, salts, oils, and culinary products and processes that give each region its distinctive dishes and regional cuisine. Over the years she has developed an extensive archive of small production, traditionally produced products that are rarely available in the United States. It is these products, combined with the bounty of the Bay Area that give the plates at Boulettes Larder their acclaimed flavor and quality.
