Halen Mon is 100% natural Welsh Sea Salt, harvested from the fresh Atlantic Waters that surround the Isle of Anglesey. A unique condition, created by the water temperature by the North Atlantic Gulf Stream, adds to the character of the ocean saline and the quality of the salt. The Halen Môn salt making process begins with pure charcoal-filtered seawater drawn from Wales’ Menai Straits. The water first passes through two filters: a mussel bed, nature’s finest filter, and a sandbank that ensures no fish or seaweed are unwittingly trapped.
The filtered seawater is then gently heated in a vacuum that encourages it to almost boil at a low temperature. As the water releases steam it is concentrated into very salty brine. When the concentration of salt in the water is high enough, it is released it into shallow crystallization tanks.
As the brine cools in the evening, crystals begin to form, first on the surface then sinking as they grow. In the morning, the salt is harvested by gently scooping out the flakes. Then the crystals are rinsed in brine until they shine with snowy brilliance. Finally, the salt is carefully dried. Ten days after it was drawn it from the sea, the salt is ready to be packed and shipped.
