This special blend was developed for our upcoming anniversary and features some of the most unique and precious spices available at b/L. The seven pepper blend features exotic and premium peppercorns from Borneo, Papua New Guinea and Japan. The combined effect is fragrant, bracing with a long finishing, resinous, pepper flavor.
This blend is an elegant way to upgrade a standard steak au poivre, and well suited to more exotic game such as deer, bison and boar. It has the ability to perfume these meats while imparting the acidic pungency, which naturally compliments these richer flavors. This is an ideal way to enhance flavors over the camp fire after a day of hunting, as well as meats prepared on the grill. The Anniversary blend can be added to a beef braise such as a classic Bourgogne enhancing the depth of flavor without deviating from the authenticity of the dish.
